It's been a while since I've tasted such a robust yet elegant pinot noir. Xander Soren's wines are firmly rooted in the California tradition, but manages to strike a balance between power and refinement.
In craftsmanship, I believe there's something intangible beyond mere intentions, while paradoxically the essence of a creation lies precisely in those intentions. With these wines, you can really sense Xander's heartfelt dedication.
We have been serving Xander Soren's wines for many years with our guests at SingleThread and now look forward to bringing them to our restaurant SoNoMa in Kyoto where we can share the terroir of our California home with our guests in Japan. The synergy between Xander Soren Wines, our Japanese inspiration, and our California perspective is in such a harmonious balance.
There is something nostalgic about this… That was my first impression when I tasted Xander Soren Wines. They are transparent yet profound, evoking the experience of Japan’s four seasons. Their gentleness seamlessly complements our cuisine—never imposing, always in natural harmony.
At the core of these wines is a precise, distinctive acidity. It does more than support aroma and structure, it brings dimension to each ingredient. The vinegar in the rice, the richness of the fish, temperature, texture, the lingering finish—when these elements intersect, the wine’s expression subtly evolves.
Xander's wines have been tested through repeated and rigorous pairings, and have proven themselves undeniable.
“A smile in a bottle"
I have tasted many wines over the years, but I've never used these words to describe one before. Xander's new venture, where he’s been actively releasing various cuvées with a focus on Japanese cuisine, fits incredibly well with my fusion of Okinawan and Chinese cuisine.
The flavors of his wine remind me of my childhood, with hints of cloves, pepper, yuzu, and marmalade that linger on the tongue, creating a delightful impression. Xander also brings smiles through his music selections, doing all the music programming for my restaurant and wine bar!
My restaurant is built around the combination of food with drinks, so beverage pairings are essential. We carry Xander’s pinot noirs and they always make our customers happy, so I was excited to try his rosé. The label is cute (kawaii!) but the wine is sophisticated and pairs broadly with so many of my traditional and modern dishes.
Coastal Pinot Noir is my favorite, and Xander Soren Wines are exactly what I've been looking for. They’re transparent, elegant, with a silky texture and delicate aroma that's really commendable. His winemaker, Shalini Sekhar, produces age-worthy wines from several renowned vineyards in California, showcasing her outstanding skill, dedication, and passion for winemaking. I enjoy experiencing their evolving vision through tastings from each vintage, and I am excited to serve Xander Soren's wines at my wine bar.
